Salt, pepper, Worcestershire sauce, curry powder, garlic, a beef stock cube, a few bits of chilli, a bit of ginger - any of these ingredients (or a combination of some - but probably not all) will all help to lift the flavour. And proper fresh ingredients will always make a more flavoursome soup than the chemically-infused, artificially preserved things that the supermarkets call ‘vegetables’.
These days ‘grow your own’ has taken on a rather grimmer meaning, but it dun’ ‘arf make a difference in the flavour department.
Em3: Well, I’ll strike out Worcestershire sauce and the beef stock cube, GB, on the grounds that they’re not vegetarian. The veg was all organic, though, so shouldn’t have had much - if any - chemicals involved.

Added on February 21st, 2006 at 11:17 amI’ve just remembered drooling over Joan’s recipes, especially the soups (Black Bean Soup, Mushroom and Curried Zucchini Soup). Yum. I’m sure you’ll find some inspiration there.
